It’s OK to keep avocados on the counter if you are going to eat them soon, but putting them in the fridge will make them last a lot longer. Storing avocados in the fridge stops the ripening process, and can make them last up to two weeks! For optimal results, store your avocados with the pit in and coat them with olive oil before putting them in an airtight container inside of the fridge.*
If you take an avocado out of the fridge and find that it still needs ripening, just leave it on the counter. When storing cut avocados, be sure to add an onion chunk to the container to help prevent browning.
